Inspired by a popular coffee shop treat, these bars are soft, fruity, and perfect with your morning latte.
Ingredients:
1 cup rolled oats
1 cup flour
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup fresh or frozen blueberries
2 tablespoons sugar
1 tablespoon cornstarch
Steps:
Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
In a bowl, mix oats, flour, brown sugar, and cinnamon. Stir in the melted butter to create a crumbly mixture.
Press half of the mixture into the bottom of the baking dish.
Toss the blueberries with sugar and cornstarch, then spread over the crust.
Sprinkle the remaining oat mixture on top.
Bake for 30–35 minutes or until golden brown. Cool before cutting into bars.
